A NOTE FROM THE EDITOR

From the outset, it was clear these cookbooks would be special. Each recipe was given space to breathe across 4–6 pages, every dish photographed by Jean Cazals, resulting in over 500 pages across the two volumes.

 

But what makes them remarkable is not only their scope, but their substance: 21 years of one of Britain’s most acclaimed restaurants, written by a chef with the rare ability to translate his craft and philosophy into print. These are landmark publications — at once reference works, inspiration, and a record of an extraordinary restaurant.
